Vendor Description
The Fermentation Project was created by coffee processing specialist Lucia Solis and professional coffee weirdo James Hoffmann to demonstrate the impact of fermentation on what we experience in the cup.
The coffee comes from Finca San Miguel Urias in Antigua, Guatemala and is ~85% Caturra, ~15% H1, and also a small amount of Bourbon. The same coffee material was harvested and processed in parallel, using four different fermentation approaches.
The Control coffee is mechanically demucilaged. Also called “machine washed”, this method minimizes fermentation by using special equipment to scrub the sticky mucilage layer off the coffee seed.
