Vendor Description
The Fermentation Project was created by coffee processing specialist Lucia Solis and professional coffee weirdo James Hoffmann to demonstrate the impact of fermentation on what we experience in the cup.
The coffee comes from Finca San Miguel Urias in Antigua, Guatemala and is ~85% Caturra, ~15% H1, and also a small amount of Bourbon. The same coffee material was harvested and processed in parallel, using four different fermentation approaches.
The Wild coffee underwent submerged fermentation with wild microbes for 48 hours. This is the traditional method for washed process coffees, where the mucilage is removed by the local microbe population.
