This Catuai lot first undergoes 24 hour fermentation in cherry before being depulped and fermented another 18 hours in mucilage. The coffee is then fully washed and dried on raised beds for 14 days.
Tasting Notes
Fragrance and aroma of chocolate and fig with notes of caramel and lime. Sweet aftertaste of rooibos tea with a mild citric acidity and silky mouthfeel.
Roasting Notes
When roasting this sequential washed lot of the Catuai variety, we recommend approaching this coffee as you would a washed central. This coffee has an exceptional amount of sweetness that allows for dynamic sugar development when the caramelization phase of the roast is extended before first crack. With a shorter caramelization, the roast will accentuate the citric acidity.
