Vendor Description
The Fermentation Project was created by coffee processing specialist Lucia Solis and professional coffee weirdo James Hoffmann to demonstrate the impact of fermentation on what we experience in the cup.
The coffee comes from Finca San Miguel Urias in Antigua, Guatemala and is ~85% Caturra, ~15% H1, and also a small amount of Bourbon. The same coffee material was harvested and processed in parallel, using four different fermentation approaches.
The Saccharomyces coffee underwent a 48 hour submerged fermentation inoculated with Saccharomyces cerevisiae (unknown strain, a couple of places have said it’s a wine yeast.)
