Thiện Trường, also known as Thiên Trường, is an emerging Vietnamese coffee variety known for its high adaptability and unique flavor potential. As it continues to gain recognition, it’s carving out a distinctive place on Vietnam’s coffee map.
SOUL introduces a creative twist by incorporating ginger ale fermentation—an homage to Vietnamese spice and craft. The ginger ale is handcrafted from heirloom ginger grown right within the coffee garden, enhancing the fermentation process with a warm, spicy complexity.
Cherries are fully ripe at harvest, washed, and undergo an initial fermentation. Once the microbial ecosystem reaches its peak, the coffee is sun-dried until optimal moisture is reached. Then begins a second fermentation phase using the fresh ginger ale. A third stage of slow drying and final fermentation follows, carefully monitored until the ideal moisture and flavor profile are achieved.
This intricate process results in a coffee that’s vibrant and aromatic, with distinct herbal spice and a gently sweet, gingery finish—a bold and memorable expression of Vietnamese terroir.
